Needed:
1 pound of preferred vegetables (zucchini, spring beans, bamboo shoot, aubergines, green chili, cabbage, etc)
70 ML thick coconut milk
1 liter water or clear stock
3.5 oz beef or shrimp (optional)
2 bay leaves
1 piece galangal (laos), bruised
Directions:
Boil vegetables, add Bamboe spice mix, galangal, and bay leaves, cook until done
Stir in the coconut milk, cook for another 3 minutes
Serve hot
